Breakfast Poblano Pepper


1 Poblano Pepper

2 Eggs

1/2 of an Avocado

1 Slice of Ham

1- 1 1/2 Cups of Shredded Cheese (or the whole dang bag!)

Salt & Pepper (to taste)

Valentino Hot Sauce (if you like spicy)


Step 1- Cut the slice of ham into small squares then place to the side. Cut the Poblano Pepper in half long ways and place to the side. Slice the avocado 4 times and scoop out with a spoon, place to the side.

Step 2- In a small pan, add a small amount of butter (or your choice of cooking spray), crack 2 eggs and scramble inside the pan. Cook on a medium/low heat. Add salt & pepper to taste. Add the ham pieces and some cheese to the egg.

Step 3- In a medium pan, add a small amount of butter and place the two halves of the Poblano Pepper inside pan. Cook on a medium/high heat. Cook the Chile’s just enough to brown each side.

Step 4- Take Chiles out of the pan and place on a plate, the inside of the pepper facing upwards.

Step 5- Sprinkle some cheese onto each half of the pepper.

Step 6- Add half of your scramble egg mix to one pepper and the other half of the egg mix to the other half.

Step 7- Sprinkle eggs with more cheese. (The more cheese, the tastier!)

Step 8- Place the avocado on the side, one by one and sprinkle with salt & pepper.

Step 9- Top with Valentino Sauce and chow down!
